These easy sweet potato chicken bites are soft, flavorful, and perfect for little hands. Made with simple ingredients, they’re a great lunch or snack for toddlers and busy families
Ingredients
- 1 cup cooked sweet potato, mashed
- 1 cup cooked chicken, finely shredded
- 1 egg
- ¼ cup breadcrumbs
- ¼ cup finely grated carrot
- 2 tablespoons finely chopped spinach
- ½ teaspoon garlic powder
- A small pinch of salt, optional
- A little olive oil for cooking
Instructions
- Preheat the oven to 375°F (190°C) and line a baking sheet with parchment paper.
- Add the mashed sweet potato, shredded chicken, egg, breadcrumbs, carrot, spinach, and garlic powder to a bowl.
- Mix everything until well combined.
- Scoop small portions of the mixture and shape them into toddler-friendly bites.
- Place the bites on the prepared baking sheet and lightly brush with olive oil.
- Bake for 18–22 minutes, flipping halfway through, until firm and lightly golden.
- Let them cool before serving. Cut into smaller pieces if needed.
